Always block (R1) to prevent damage, then roll away (move stick while pressing R1), then attack using combos. You can also try blocking and countering (R1, and when an enemy sword hits yours, press square or triangle).

Another useful technique is to keep jumping (X) and then use the Flying Swallow attacks (triangle while in the air).
